Väkst is also understood in German, so it only makes sense that the heart in one of the best restaurants in the Cofoco group is a two-storey greenhouse. The Väkst is part of Hotel SP34 and is therefore also located in the middle of Copenhagen’s old town. And when you think about it, you feel a bit like you’re part of an exclusive garden party here. The staff is accordingly cheerful, the wines are light and affordable and the dishes read like freshly harvested. The menu is uncomplicated Nordic and uses local ingredients, but surprises with funny details. There is a vegetarian and a meat and fish menu, but in both cases vegetables are the star.
