The luminaries of Carne Salada can be found in Cologna di Tenno. The Benini family, already in the third generation, attracts meat lovers to their 17th century village farm with traditional hearty food and the regional speciality Carne Salada.
The meat with which the sausages are made is bought by the family only from selected farmers. In addition to the sausages, the wine is also made. We recommend the Schiava di Fontanelle El’Doss. The Largo pickled by Giorgio Benini for one month is a highlight. This very tasty bacon is served with pickled vegetables and on a thin slice of bread. The meat dishes are excellent throughout, such as the slaughter plates with polenta and sauerkraut. An undisputed highlight of the house, however, are the three types of Carne Salada:
“cotta”, “cruda” and affumiciata. Carne Salada is smoked and resembles a ham that melts on the tongue and develops a strong herbal aroma. For the maximum satisfaction of the palate, the Dolce de Nonna Lisa should be used as a desert. Afterwards an espresso and the excursion to the Cascata Varone, nothing stands in the way.
