Don’t allow yourself to be seated with the rest of the tourists in one of the trattoria’s side rooms, but ask one of the waiters for a spot in the thick of it. On offer is authentic Roman cuisine of the highest quality: dishes like pasta with cheese and black pepper, delicious carciofi alla giudea, fried artichokes, and their legendary spaghetti al moro, a carbonara purportedly invented here in the years after World War II to satisfy the taste buds of American GIs nostalgic for bacon and eggs.
