Seldom does one encounter such an entrance to a bar. In order to get inside the Varnish, you must first make your way through the Coles Pub – LA’s oldest – and find the inconspicuous door at the back. Behind is concealed a magnificent space with panelled walls, Victorian oil lamps and old-style industrial-chic. Gentle jazz creates the background, while Marcos Tello, LA’s barman du jour, mixes old-school classics, simple yet impressive, or specials like Floradora, with gin, lime, ginger and raspberry, or the Brazilian Fix, with Cachaça, lime, honey and golden Chartreuse. The Varnish is also the perfect hangout for Mad Men fans, ever since Christina Hendricks declared it her favourite bar.
