The name Iluka comes from the Aboriginal language and means ‘by the sea’ – which perfectly describes the concept of the restaurant. The menu changes seasonally and is based on the catch of the local fishermen, which ensures absolute freshness and sustainability. The head chef is Beau Clugston, who previously worked at the world-famous Noma. The cuisine is minimalist and refined. Simple preparation that emphasises the natural flavours of the ingredients. Favourite dishes include raw oysters, mackerel tartare and Danish crayfish, often accompanied by finely matched natural wines. With seating for around 35 diners, the restaurant offers an intimate atmosphere and is a favourite meeting place for foodies looking for a connection to Scandinavian cuisine without superfluous decoration or overloaded plates.
