A visit to the farm, where the best Pecorinos of the region are produced, is worthwhile for all cheese lovers: Il Pecorino di Pienza di Cugusi Silvana.
In 1962 Raffaele and Maria Cugusi came from Sardinia to Tuscany and started producing their Pecorino.
Cugusi now offers 16 different types of pecorino. The delicious cheeses are stored in huge shelves in the cellar, where they are rubbed with olive oil by hand every ten to fifteen days and turned over: a traditional method that the big producers no longer take the time to follow. The most mature pecorino, Gran Riserva, is stored on wooden boards for 20-22 months, depending on its size.
Do not miss the ricotta. It is really unique, especially with the chestnut honey sold there. The Pecorino al Tartufo (with truffle) is also good, but cannot beat the Gran Riserva. It is the best Pecorino we have discovered so far.
You can also take the ricotta with honey and a little Gran Riserva as a picnic or try it on a bench next to the farm. It is so good that the little idyllic view of the parking lot quickly becomes unimportant. Cugusi is the place to buy Pecorino! Gastronomes also know this, as many people buy their cheese here. The practical thing is that they also get the cheese shrink-wrapped. Cugusi is also a regular visitor to the Slow Food fair in Turin.
