In the fifth generation one of the best pasta in Italy is produced in Maglie: Benedetto Cavalieri. At the end of the last century the durum wheat farmer Andrea Cavalieri and his son Benedetto had the plan to produce first-class pasta. From the outset, the basic ingredient of freshly ground durum wheat was used from exposed fields, to the detriment of yield, in favour of taste. Under these harsh growing conditions, the plants develop only a few fruits, but an extraordinarily intense aroma. In the production plant even Benedetto himself stands behind the counter from time to time and sells the 14 varieties of pasta. It would be best to stock up on an annual ration.
