The Al Vecchio Fornello is always busy, everyone comes here to be pampered by the meat specialities of the owner Santino. Finally, among the villages in the area, Cisternino is known as the municipality where the Fornelli tradition is most strongly remembered. What makes this place special, however, is that the meat comes from the farm’s own rearing. Orders and selections are made at the bar and olives, cream cheese, capocollo and bacon shorten the waiting time until the meat is served. Excellent are the two varieties of salsiccia, fine and “a punta di coltello”, the bombette and gnumarieddi. The lamb is mainly used for chops. The red wine in the carafe is the perfection – a good Negramaro.
