Aede is one of the few Scandinavian restaurants in Rome that you can probably count on one hand. And Aede is something very special. Behind it is Fabrizio, a young Abruzzo-born chef who is now bringing to Rome a whole new kind of cuisine that he learned in London, Berlin and Copenhagen. The menu is a sheet of paper with a scattered list of creations defined only by the name of their main ingredients, from river fish to shellfish to meat, buttermilk and, above all, vegetables. The latter, Fabrizio is always keen to stress, must not simply be a garnish or garnish, but must be the real protagonists of a dish. At Aede, you should bring time and be able to get involved in the cooking. It’s not a place for a plate of pasta, and that’s a good thing.
