The “A Cevicheria” is the address when it comes to the Peruvian national dish Ceviche. Although the restaurant has only few places to offer and doesn’t accept reservations, the waiting time is spent with Pisco Sour – a summer drink made of lime juice and protein that the Lisboners enjoy from champagne flutes. Who then sits – hopefully at one of the seats at the round bar – has the best view of the fingers of the cooks, who have dedicated themselves completely to the Peruvian method of preparation. It’s easy to see, but it doesn’t take much: salmon and tuna cubes, lime juice, cane sugar, the thinnest red onions and a few flakes of hot rocoto pods. As a starter, you must choose the gazpacho with the tapioca pearls in a mysterious marinade!
